A friend told us about this book after we drooled over a handful of delish recipes she had made from it. So I picked it up as one of Buby's Daddy's birthday gifts. I say with confidence, it is the best cookbook ever!!! Everyone should own it. Seriously, I spent all night going through it. I absolutely LOVE this cookbook. It's the best one I've ever used. There are several more put out by Cooks Illustrated and they're equally as good, though a little more specific and not as general as this one. I swear by anything from Cooks Illustrated!
I love it! I am a big fan of owning cookbooks, but not using them. This one is different because of the scientific angle. It explains why things need to be done. I'll be using this all the time.
