An APPO A Day



Graga arrived exactly one week ago with three little tubs of applesauce for my Buby. And by breakfast today it will all be gone. Buby is incredibly smitten with Graga's homemade applesauce. He begs for it. Our typical morning routine is that Buby wakes up and comes into our bedroom for a little bit before heading down to breakfast. Since Graga arrived, as soon as we reach the bottom of the stairs, Buby starts chanting "APPO!" "APPO!" I put him down and he runs right to the fridge to get out the "APPOSAUS." When he is sure I am dishing it up, he lets out the most ridiculous giggle. As to say, "Ahhh, happy now." I don't have Graga's secret applesauce recipe on hand, but here's one I found for kids on PBSkids.org. It's part of Mr. Rogers' Recipes. Simple. You could substitute the sugar with honey. We've had homemade applesauce both ways and LOVE it the same.

Ingredients:
4 medium apples
1/2 cup water
1/4 cup sugar
pan
spoon
cinnamon
paper cups and spoons
Instructions:
Peel, core, and slice the apples. Cut the apple slices into small chunks. Put the apples in the pan with 1/2 cup water and simmer for 15 minutes. Stir in 1/4 cup sugar and a sprinkle of cinnamon. Wait until the applesauce cools, and you can eat this warm. Or refrigerate and eat it when it's cold.

I didn't see this post until tonight. Where've I been? When I make applesauce, I leave the skins on and cut the apples into quarters (no coring necessary). Simmer in a lidded pot of water until soft, then put through a food mill. The mill removes the cores and seeds and the applesauce will be slightly pinkish because of the skins. Extra vitamins in there, too. Add cinnamon and/or sugar to taste, maybe even toss in a cinnamon stick, too.
